Upon request, we have the ability to enhance the tenderness of meat products through the process of moisture infusion. This process involves the infusion of a brine mixture which enriches the product, creating a delicately tender and moist eating experience.
We have developed a purpose-built, fully certified dry aging room, offering a unique range of dry aged products at either 45 or 60 days.
By collaborating with chefs we ensure menu success by helping select products that are seasonably appropriate in terms of supply, quality and price.
We work in partnership with Statewide Refrigerated Transport (SRT) to deliver throughout Tasmania and Victoria. We also offer daily delivery to Melbourne including priority next day service.
